It may be a while before we get around to updating The Earthling’s Cookbook, but I don’t want to wait any longer to share my favorite summer breakfast with the world!
To make 1 serving, you will need:
- 2 slices of bread or 1 bagel (whole-wheat or poppy-seed is particularly tasty)
- butter or margarine
- 2 Tbsp. nutritional yeast flakes (huh?)
- 1 small tomato or 1/2 large tomato
- fresh or dried dill
- salt (optional)
Toast the bread. Meanwhile, mix the yeast into the butter. (You can just sprinkle the yeast over the buttered bread if you prefer–it’s easier–but that means some of the yeast gets soggy against the tomato and the consistency is not as pleasant.)
Spread butter and yeast on bread. Slice tomato and put it on the bread. Top with dill and salt to taste.
